I love delicious and easy homemade snacks that are also low in sugar and nutrient dense. Therefore homemade granola is something that I proiritized learning how to make. You won’t believe how simple it is to make this delicious pumpkin spice granola. Now that I know how easy it is to make, I can honestly say I will never buy store bought granola again. It is easy, healthy, and and so versatile. You can use it to put on yogurt, you can use it on desserts, you can use it as cereal, or just to snack on. I am so excited for you to try it!

Ingredients For Pumpkin Spice Granola:

  • 4 cups of Rolled Oats
  • 2 cups of chopped nuts (I like to add a combination of almonds, pistachios, walnuts, and pecans)
  • 3/4 cup pumpkin seeds
  • 1/2 cup Maple Syrup ( this is the right amount of sweetner for us, adjust as you like)
  • 1/3 cup Olive Oil
  • 1 teaspoon of vanilla extract
  • two teaspoons Pumpkin Pie Spice
  • cinnamon ( measure with your heart )

Equipment You Will Need:

  • A Large Bowl
  • Large Baking Sheet
  • Parchment Paper
  • A Spoon
  • Measuring Cups
  • Measuring Spoons
  • Spatula

To Make Pumpkin Spice Granola

Pre-Heat the Oven to 250 degrees

You want to get yourself a big bowl to mix all the ingredients. Add rolled oats, chopped nuts, and pumpkin seeds, pumpkin pie spice, and cinnamon to the bowl and mix the dry ingredients together well. Next add in your wet ingredients – the olive oil, maple syrup, and vanilla. Now take the mixture and pour it on to your baking tray lined with parchment paper. Spread the mixture all over the pan in as even of a layer as you can. Subsequently, It’s also okay if it kind of clumps together because that’s when you get those fun clumps of granola that are great for snacking.

To Bake The Pumpkin Spice Granola

Our giant pan of homemade granola is going to go into the oven which we have preheated to 250 degrees and it’s going to go in there for about an hour and 20 minutes. Be sure to let the granola cool completely before you break it apart to store it.
