How To Make Fresh Peach Cobbler

This fresh peach cobbler is so good. It’s got whole grains and is bursting with fresh fruit. There is no refined sugar in it as I use maple syrup and date sugars for the sweetener. It is delicious and you’re gonna love it.
To make the Fresh Peach Cobbler you will need:
- 3.5 cups of fresh peaches
- 1 cup Oats
- a cup of Almond Flour
- 1 cup chopped Nuts of choice
- 1/2 fresh lemon
- 1 t almond extract
- 1 teaspoon of cinnamon
- 1/4 cup Maple Syrup
- 1/3 cup olive oil
- 1 Tablespoon of cornstarch
- 2 Tablespoons date sugar ( or maple syrup or you don’t have it)
Making The Fruit Layer
Add the fresh peaches to a bowl along with half of a lemon, the two tablespoons of date sugar or maple syrup, almond extract and the corn starch. Next, give it a nice toss and set it aside for the flavors to combine while you make the topping.
Making the Nutty topping
Add the nuts ( I used walnuts, pistachios, pecans, and macadamia nuts), oats, almond flour salt, olive oil, and maple syrup. Once they are in the bowl get that really good and mixed up. Next, put olive oil on the bottom of the baking dish here so it doesn’t stick.
Assembling the Fresh Peach Cobbler
Drain out the excess juice from the peach mixture so that the cobbler doesn’t have too much moisture in it. After that, pour the fruit into a baking dish and plop the delicious nut mixture right on top.

To Bake the Peach Cobbler
Put the Cobbler into a 350 degree oven for about 40 minutes. ( Check it at 35 minutes)
This cobbler is a really great dessert to make, it’s not super high in sugar, it’s got healthy whole grains in it fresh fruit, nuts, oats, delicious. You’ve got to try this.
