How To Make Blueberry Lemon Frozen Yogurt Bark


I love having a healthy frozen treat ready for snacking. This Blueberry Lemon Frozen Yogurt fits the bill. It’s is sweet, tangy, refreshing, and good for you!
Ingredients For The Blueberry Lemon Frozen Yogurt Bark
- two cups of plain Greek yogurt
- Juice of a Fresh Lemon ( I use 1/2 of a fresh lemon but you may want to use more)
- A container of Fresh Blueberries
- 2- 3 tablespoons of Maple Syrup ( I used two)
- chopped nuts or homemade granola
- Date syrup to drizzle on top ( optional but delicious and pretty)
Equipment You Will Need:
- a bowl
- a spatula
- parchment paper
- a baking sheet
To Make The Lemon Yogurt
When I was a kid my absolute favorite type of yogurt was lemon yogurt. Store bought flavored yogurt has a ton of extra sugar in it so I like to make my own.
Place the two cups of plain Greek yogurt into a bowl. Next, cut a lemon in half and squeeze in all of the juice. Add in maple syrup by a tablespoon at a time and taste as you go to get the right amount of sweetness for your palate.
To Assemble The Blueberry Lemon Yogurt Bark
Line a sheet pan with parchment paper and pour out the lemon yogurt onto the parchment paper spreading it out in a thin layer with a spatula. Next take the fresh blueberries and sprinkle those right on top. After that top with chopped nuts or granola, and lastly drizzle with date syrup if desired.
To Freeze The Blueberry Lemon Yogurt Bark
Put the blueberry lemon yogurt bark into the freezer for at least two hours.
Once it has fully frozen, you can break it into pieces. It make a delicious snack but is also really, really, cold so you may want to just let it thaw just a little bit before you dig in.
