How to Make Easy White Chicken Chili
I love making soups or chili on a cold day. They are the ultimate comfort food. A warm bowl of soup after a long day on the homestead is perfection. My beautiful sister Kristyn made THE best White Chicken Chili when she came to visit me when I lived in Charleston. It was warm and delicious with just the right amount of spice. I hope that my rendition of this easy white chicken chili makes her proud. I think of her every time that I make it. You can use a rotisserie chicken for this recipe, or you can easily make this in a pressure cooker with uncooked chicken. I have done both and they both turned out delicious. Using fresh cilantro from the garden is a beautiful and flavorful garnish.
YOU WILL NEED:
Shredded Rotisserie chicken or 1 lb of raw chicken ( no need to cut the chicken if using raw, you will shred it later)
5 cups Chicken Broth ( I use low sodium_
A can of White beans
A jar of Green salsa, I like tomatillo (look for one without dyes or HFCS)
salt to taste
Spices that you like, such as cumin, oregano ( 1- 2 tsp)
Avocado, sour cream, tortilla chips
TO MAKE :
In a pot:
Add the broth, chicken, beans and salsa into the pot and heat through, add spices to your liking.
In a pressure cooker or Instant Pot:
add all ingredients and cook for 15 minutes on high pressure. Quick Release after 10 min. Shred the chicken with two forks and add it back to the pot
Serve with Sour Cream, cheese, chips, avocado, fresh tomatoes, Cheese, fresh cilantro, green onion
