I love dinners with all whole food ingredients. This Easy Chicken with bacon, and roasted vegetables is delicious and fun to make. It is a wonderful way to use beautiful fresh vegetables from your garden. It’s Whole 30 compatible, dairy, and gluten free. If you switch out the sweet potatoes for another vegetable such as broccoli or cauliflower this would be low carb as well. I used Cornish game hens but you could use any kind of chicken you like. You do not need any additional oil or butter because the fat from the bacon and juice from the chicken will provide all of the fat you need. I like to serve this dish with a cauliflower puree and a salad. The leftovers ( if there are any) are extra flavorful the next day.

Ingredient list:

  • Chicken ( I used 4 Cornish game hens)
  • Brussel Sprouts ( about a cup)
  • one large sweet potato
  • 5 slices of raw bacon
  • garlic (I use one – 2 cloves, minced)
  • Spice blend of choice ( I use Wildtree’s scampi blend, but you may use anything you like)

To make the Chicken:

Get out a large roasting pan or a cookie sheet.

Cut up fresh Brussels & sweet potatoes 
Put 4 Cornish game hens on top 
Put 5 chopped raw strips of chopped bacon on top of chicken
Sprinkle with garlic & scampi blend 

Cook time

Roast in the oven for about an hour & 15 minutes, check on it after an hour.

Let it cool and Enjoy!
