Gluten Free Cupcakes with Peanut Butter Frosting

Who loves cupcakes? I know I do! These gluten free cupcakes with peanut butter frosting are the cupcakes that I made for my boys and their friends after a fun day of Geocaching. They have a fun “buried treasure” inside! The boys loved them and it was a great reward after a hard day of searching for treasures.

Gluten Free Cupcake Recipe
( You can use a boxed cake or make this from-scratch version. Try it! It’s super easy! )
Preheat Oven to 375
2 cups of Cup for Cup Gluten Free Flour ( or regular flour)
2 eggs
3/4 cup milk of choice
1 T Baking powder
3/4 t salt
1 t vanilla
1 cup of sugar ( you can also use Swerve) or you can also use 3/4 cup honey
1/2 cup applesauce, oil, or butter
Divide the batter in half, scoop one half of the batter into your cupcake liners.
For the “buried treasure”
chocolate chips, chocolate kisses, or peanut butter cups
Put chocolate in the center of the batter for each cupcake and top with remaining batter.
Peanut Butter Frosting Recipe
1/2 cup of real butter
1/2 cup Peanut butter – no sugar added
2 cups of powdered sugar
1 1sp vanilla
Bake and assemble the cupcakes
Check them around 25 minutes – if needed bake longer
Let them cool and frost. For extra fun, I stuck a pirate flag in each cupcake.
